It has turned rather warm. Today, some notes on brewing good iced coffee at home.
Points to watch
- Choose a medium-dark to dark roast.
- Grind finer than you would for hot coffee.
- Chill the coffee as fast as you possibly can.
- For café au lait, pour in this order: ice, then milk, then coffee.
Brewing the iced coffee
What you need:
- Coffee beans12g
- Coffee server
- Dripper
- Funnel (anything that sits on the server and will hold ice — a dripper works)
- Coffee measure

1. Measure out one scoop of beans (about 12g) and grind them slightly finer than you would for hot coffee.

2. Set a filter in the dripper and add the ground coffee. Drop a few drops of hot water onto the surface and let it bloom for 30 to 60 seconds.
3. While it blooms, set the funnel on the coffee server and put five or six ice cubes in it.
4. Pour the hot water onto the dripper a little at a time.
5. The coffee passes through the ice, chills rapidly, and drops into the server.

How to pour a two-layered café au lait
Here is how to pour a café au lait so the milk and coffee separate cleanly into two layers.
1. Fill the glass with ice to about half its height.
2. Pour in milk until the tops of the ice cubes are just showing.
3. Pour the coffee gently, aiming at the ice showing above the surface.
