What is sourdough bread, exactly? You rarely see it in a Japanese bakery, so most people here have never eaten it. In San Francisco, sourdough and clam chowder are a well-known pairing; in Europe, households have baked sourdough for centuries; and in Australia I hear more and more popular cafés are serving it.

I would like sourdough to become something you can eat easily in Japan too. In February 2021 I left Hyogo, where I had lived for years, and moved to Fukuoka — and I now supply sourdough to a café near the house run by a friend, called Patagonia no Minami.
So far I have baked coffee and chocolate sourdough, honey bread with rosemary and walnut, pumpkin bread, and other seasonal loaves — including ones made with Patagonia no Minami's own roasted coffee. I would like to keep going, keeping a sense of play about it, so that more people come to know what sourdough can be. If you are in the area, do call in and try some.
