Sourdough & Kitchen
I first picked up a guitar at twelve. Everything since has led back to music and art — it became my work, and very nearly all of my time. For most of those years I had nothing that could honestly be called a hobby.
Then a friend living in Birmingham, England, told me about a bread made from nothing but flour and water, raised by wild fermentation. That was all it took. Sourdough took hold of me.
What draws me to it is how little it asks for. Flour and water. That is genuinely all. Watching a dough swell on its own, and pulling a proper, fragrant campagne out of the oven, is a particular kind of happiness that is hard to put into words.
Sourdough & Kitchen is a record of that bread — still little known in Japan — along with the dishes that go well beside a loaf.
